French bread with fruit

  • Preparation time: 10 minutes
  • Cooking time: 45 minutes
  • Yield: 8 cups

Ingredients

  • 8 cups bread cubes- try whole wheat bread
  • 2 cups fruit, sliced or chopped- fresh, frozen or canned
  • 4 eggs, lightly beaten
  • 1 cup of milk
  • 2 teaspoons vanilla
  • ¼ cup of sugar
  • ¼ cup softened margarine or butter
  • ¼ cup of sugar
  • ½ cup flour (white or whole wheat)

Preparation

  • In a medium bowl, whisk together the eggs, milk, vanilla, and sugar. Pour over the bread cubes. Shake gently to wet all of the bread with the egg mixture.
  • Cover with plastic wrap and refrigerate until all liquid has been absorbed (30 minutes) or overnight.
  • Just before baking, remove the casserole from the refrigerator. Preheat oven to 350 degrees Fahrenheit or 175 degrees Celsius.
  • Make the topping: In a small bowl, combine the softened margarine, sugar, and flour until crumbly.
  • Remove plastic wrap and sprinkle topping over fruit. Bake until cooked through and just beginning to brown, about 35-40 minutes. A longer cooking time is needed when refrigerated overnight. Serve hot.
  • Refrigerate leftovers for the next 2 hours.

For fruit, try diced peaches, pears, berries, or apples.

Lightly sprinkle with cinnamon or other spices such as nutmeg, ground cloves, allspice, or cardamom at the end of the second step.
