That’s why we offer you a series of healthy, tasty and easy to make dishes. On this occasion italian vegetable soupa preparation provided by “Food Hero”, a project of Oregon State University, funded by the Supplemental Nutrition Assistance Program of the United States government.
Preparation time: 15 minutes
It’s time to cook: 45 minutes
Yield: 10 cups
1 onion medium, chopped
1 rod of celery chopped
1 carrot big, sliced
2 tablespoons of oil
1 dad large, peeled and cut into pieces
1 box (15 ounces) tomatoes stung
2 cans (15 ounces each) vegetable or beef broth (about 3 1/2 cups) (see notes)
1 box (15 ounces) Red beans (red), empty of liquid
1 teaspoon of dried basil
½ cup of macaroni uncooked
2 zucchini small, sliced
½ teaspoon of salt
¼ teaspoon of pepper
Wash your hands with soap and water.
In a medium saucepan over medium heat, sauté onion, celery and carrot in oil, stirring constantly, until onion is tender but not brown.
Add the potato, tomatoes, broth, beans and basil.
Cook until boiling then lower the heat. Cover and simmer for 15 minutes.
Add macaroni and zucchini. Bake an additional 15 minutes.
Taste the soup and adjust the flavor with salt and pepper to taste.
Refrigerate leftovers within 2 hours.
The broth can be canned or you can use stock cubes. For each cup of stock, use 1 cup of very hot water and 1 teaspoon or 1 stock cube.
Use whatever vegetables you have on hand.
Add cooked meat if desired.
